We’re your new go-to for carbohydrates, an online bakery and providore. We sell a variety of seasonal specials, championing local, high-quality and sustainable produce, and deliver them to customers all around our neighbourhood in inner north Melbourne.

I’m Alex, a baker and chef, with more than six years experience in some of Melbourne and London’s best bakeries and restaurants. I’ve trained in pastry, pasta and bread, among many other delicious carbs. I’m thrilled to now sling the finest baked goods from my microbakery out the back of my home in North Fitzroy.

Hatcher Baker began in December 2022, when I started delivering my homemade mince pies to friends and family across Melbourne for Christmas. Word spread, and well, a year later, I decided to quit my job at a nearby bakery and convinced my wife to let me turn our spare bedroom into my own microbakery. And here we are! I’m thrilled to share my carbs with you and your loved ones, and cultivate the most glorious Hatcher Baker community.

And why delivery instead of bricks & mortar, do you ask? Let me fill you in on a secret, from one food-enthusiast to another. As a baker, I have to wake up early. On my days off, the last thing I want to do is roll out of bed at 7am and queue early for a fresh loaf. I wanted it on my doorstep, waiting patiently for my alarm to go off, and ready to munch into with a slab of butter and some top-notch raspberry jam. I created a delivery service because, selfishly, I wanted it myself. And hopefully - you want it too!
